Motichoor Ladoo Recipe
This is an Indian sweet, different from other ladoo types, because this is with small boondi & Little different method of making and ingredients. In this post, you can learn how to make these Motichoor Ladoo Recipe with steps.
I know there should be some technique to make small boondi.

Makes – 10 to 12 ladoos
Ingredients:
Boiling Water – 1 to 2 table spoon
Cashews – 3 table spoon chopped
Ghee – 2 table spoon
Badaam / Almonds – 3 table spoon chopped
Oil for Deep frying
For Sugar Syrup:
- Sugar – 1 cup / 200 grams
- Water – 1/2 cup / 120 ml
- Saffron strands – a pinch
- Cardamom Powder – 1 tea spoon
For Boondi:
- Gram Flour / Besan / Kadala Mavu – 1 cup / 120 grams
- Sooji / Rawa / Semolina – 1 table spoon (Put it in a blender and make into a fine powder)
- Water – 1/2 cup or adjust
- Orange Food Coloring – 1/2 tea spoon
Method:
Step-01 Make the batter
Mix Gram Flour, semolina, baking soda, 1 table spoon melted ghee and orange color in a bowl.Add in water and mix well to form a smooth batter. Gradually add water little by little to the above dry ingredients to make the batter.Don’t prepare the batter thin, else the boondi will fall flat. If it is too much of thick then the boondi wont fall off the ladle
Step 2: Make the sugar syrup
Now take a pan put water & sugar in it. Mix well until the sugar gets dissolved in water.After that make this boil. Simmer for 8 to 10 minutes till it forms one string consistency. If you dip the ladle inside the sugar syrup and take it out, then the last drop falling off the ladle should form a string like effect. Now you can add the cardamom(cardamom powder) and saffron and make this mix well. Now make sure the syrup stays super nice & warm till you finish frying the boondis.
Step 3: Fry the boondis
wait until oil get heat for frying. Don't get it too hot. Now take a perforated spoon ( I used a steel strainer with medium size holes in it). Now take the batter and pour it over the holes. Using a spoon tap off the holes, so the boondi will fall through the holes. Fry this on a medium, high heat for couple of minutes.It should be little softer side, shouldn’t get crispy. Drain the boondi onto a bowl and set aside. Repeat this process until you finish the batter.
Step 4: Making ladoos
Now Add all the nuts to the boondi and put the warm syrup on it. Mix well till it gets combined. Now take this in a mixer or food processor. Add a table spoon of boiling water to this and pulse for few times so it gets crushed and becomes one mass. Don't grind it too much or it will get completely mashed up. Now transfer this in to a bowl. Dip your hands in ghee and take a small portion from it. Shape into balls and arrange them on a plate. Decorate with a slice of almonds or cashews if you like and enjoy.
