One-pot chicken chasseur


Ingredients 

  1. 1 tsp olive oil
  2. 25g butter
  3. 4 chicken legs
  4. 1 onion, chopped
  5. 2 garlic cloves, crushed
  6. 200g pack small button or chestnut mushroom
  7. 225ml red wine
  8. 2 tbsp tomato purée
  9. 2 thyme
  10.  sprigs
  11. 500ml chicken stock

Method

  1. Heat the oil and half the butter during a giant lidded casserole. 
  2. Season the chicken, then fry for regarding five minutes on either side till golden brown. 
  3. take away and put aside.
  4. Melt the remainder of the butter within the pan.
  5.  Add the onion, then fry for regarding five minutes till soft. 
  6. Add garlic, cook for regarding one min, add the mushrooms, cook for two minutes, then add the wine. 
  7. Stir within the tomato purée, let the liquid bubble and scale back for regarding five minutes, then stir within the thyme and pour over the stock. 
  8. Slip the chicken into the pan, then cowl and simmer on a coffee heat for regarding one time unit till the chicken is incredibly tender.
  9. Remove the chicken from the pan and keep heat.
