Prawn and Litchi Salad Recipe
Ingredients
- 500g of prawns, shelled and cleaned
- 2 tbsp of spring onions, chopped roughly
- 1 mango flesh, roughly chopped
- 500g litchis, deseeded
- 1 tsp of chilli flakes
- 1/2 lemon for lemon juice
- 1 tbsp of olive oil
- A handful of peanuts, to garnish
- Salt to taste
Method
- 1. Toss the oil along side the juice, spring onions and hot pepper flakes. Use this as a marinade for the prawns - allow them to marinade for quarter-hour during this mixture.
- Toss the prawns along side the marinade on high heat in a very kadhai and fry for concerning 2-3 minutes, by which period the prawns ought to be hard-baked.
- Set aside, whereas you combine along the mango and litchi, then add everything along, add the peanuts for a touch of crunch, season and serve now.
