Prawn and Litchi Salad Recipe




Ingredients 

  1. 500g of prawns, shelled and cleaned
  2. 2 tbsp of spring onions, chopped roughly
  3. 1 mango flesh, roughly chopped
  4. 500g litchis, deseeded
  5. 1 tsp of chilli flakes
  6. 1/2 lemon for lemon juice
  7. 1 tbsp of olive oil
  8. A handful of peanuts, to garnish
  9. Salt to taste

Method

  1. 1. Toss the oil along side the juice, spring onions and hot pepper flakes. Use this as a marinade for the prawns - allow them to marinade for quarter-hour during this mixture.
  2. Toss the prawns along side the marinade on high heat in a very kadhai and fry for concerning 2-3 minutes, by which period the prawns ought to be hard-baked.
  3. Set aside, whereas you combine along the mango and litchi, then add everything along, add the peanuts for a touch of crunch, season and serve now.
