Ingredients
Milk(full cream) - 1 Litre
Lemon juice - 2 tablespoon
Sugar - 2 cups
Water - 3 &1/2cups
Elachi powder- 1 pinch
Ice cubes - 12
Nuts (optional) - For garnish
Method
- Heat the milk, when it begin to boil, simmer the flame, add the juice slowly as you stir.
- Switch off the flame once the whey water clearly separates.
- Add the Ice cubes and blend well. Updated : ice cubes square measure additional to prevent the curdling at that instant. It prevents the chenna to become arduous and helps for soft texture.
- Take a metal strainer, lined with a cheese cloth/muslin cloth(I used my dupatta). Pour the thick milk in it.
- Wash it well within the running water below the faucet to get rid of the lemon smell and sourness.
- Let the water drain and droop this chenna for half-hour. I simply slightly squeezed the surplus water currently then terribly gently as my dupatta did not drain the water by itself. however its not a requirement if the fabric is correct.
- After 1/2 hour, take out the chenna in a very bowl.I will be currently additional sort of a crumble look wise.
- Now knead this for 7-10 minutes gently to create it sort of a soft and sleek dough.
- Make sleek equal sized tiny balls. I created some twenty balls, you'll be able to change the quantity in keeping with the dimensions you opt to urge. Take sugar, cardamom powder and water in a very sterilizer and boil it.
- After the sugar gets dissolved fully and therefore the sirup boils, add the balls made rigorously one by one.
- Cover the sterilizer and cook it until you get one whistle in medium flame. once a whistle, keep for one more five minutes in low flame.
- Put off the flame and let the pressure gets discharged by itself, then open the lid to check the rasgullas – by currently it'd have doubled in size. If skinnyk|you think that|you're thinking that} the sirup is just too thin and not sweet enough, boil once more in low flame till you get desired thickness of the sirup.
